Energy saving with low temperature cooking

Sous vide or not sous vide - that is the question.

Low temperature cooking making use of water baths and using induction hobs and planchas for finishing can give big savings in both energy usage and actual costs.

A typical restaurant cooking on six gas burners and using a gas salamander and char grill will typically consume 90kW of energy. If the kitchen is running for 12 hours per day with gas costs of 2.5p per kW hour daily costs will be £18 per day.

Gas £18/day or Electricity £9.60/day  You choose! 

For the same output a kitchen using low temperature cooking methods and the kitchen with induction for finishing will use no more than 16 kW of energy. With this kitchen running for 12 hours per day and electricity costs at 5p per kW hour, daily costs will be £9.60
